Cooking with Quinoa

Dec. 4, 5:30-6 p.m.

High in protein and loaded with slow burning carbohydrates, quinoa can be turned into a tasty nutritious meal any time of day. Start your day with quinoa pancakes or quinoa porridge with fresh berries and see how it keeps you fueled throughout the morning. For a light lunch, quinoa is low in calories, but still very filling.

Come learn the basics, enjoy a taste and let Chef Paolo Neville and Bistro Elaia open up a world of possibilities with quinoa. Chef Paolo will be demonstrating a roast pork loin served with a holiday inspired quinoa salad - a treat on any holiday dinner table. He’ll also give you ideas for some amazing quinoa inspired desserts.

Soup 101

Dec. 11, 5:30-6 p.m.

How can I make a rich, creamy soup that’s low in fat? How do I use a variety of different spices? How can I take a boring run of the mill soup and turn it into a meal worthy of any elegant dinner party?

Dr. John Peters and Executive Chef Paolo Neville of Bistro Elaia will walk you through the process of making delicious soups from scratch. And you’ll enjoy the rich flavors of hearty winter squash bisque topped with cranberries and sage that's sure to impress at any holiday dinner table.

Satisfying Snacks

Dec. 12, 12:30-1 p.m.

Snacking gets a bad rap because we often reach for foods that aren’t very good for us. Foods like chips and candy bars are high in salt, sugar and fat. The reality is that our bodies like a mid meal nosh as long as it’s a nutrient dense food. Led by Suzy Bossart, this series of classes will build your repertoire of satisfying snacks that can go on the road, have a meaningful shelf life and will, most importantly, nourish your body and soul.  

In this class, you’ll discover kale, including the nutritional qualities of kale and how to turn greens into crisps.

How Do I Cook This? - Squash

Dec. 18, 5:30-6 p.m.

Our bodies are designed to eat with the seasons and squash is abounding this time of year. So be introduced or re-introduced to winter squash by Molly Kemmer and John Paro of the AHWC Fitness Center! If they’re intimidating because of their size and solidity or you want to reach beyond the go-to butternut, this class is for you! 

Squash are easily roasted to delicious, sweet tenderness, are versatile and have great nutrient density. Learn how to select the best squash and two roasting techniques.

Holiday Appetizers - CANCELLED!

Dec. 20, 5:30-6:30 p.m.

Wow your family and friends with a couple new holiday party appetizers. Bring ease to your holiday entertaining with these “do-ahead” recipes that are tasty, elegant and a perfect entre to any meal. Not sure what wine to serve with your meal? As a Certified Sommelier, Chef Shellie will share some of her ideas with you!

  • $10 fee
  • Recipe cards of Roasted Egglant and Red Bell Pepper Compote and Shrimp Skewers with Grapefruit and Citrus-Wasabi Mignonette will be provided
  • Note: while we will spend time on wine pairings, no alcohol will be served at this event.
